There are numerous options, but the best mindfulness exercises maybe those that are simple and accessible to all while still assisting us in living in the moment. However, mindfulness does not happen automatically; as with most worthwhile endeavors, mindfulness must be worked at and practiced regularly in order to be beneficial to us.

Eating Meditation - rather than gulping down our food, we can pause for a moment to savor it. Consider the meal, smell it, feel the textures as we chew, and take note of the flavor. This exercise can be completed in under a minute if you take the time to observe it for what it is.
Take a mindful break - rather than checking emails or scrolling through social media during our break, we should take some time to notice the sensations in our body and mind - listen to the sounds we can hear, feel our heart beating, and be present in our body for a few moments, letting go of everything we are thinking about.
Consider taking a mindful shower - rather than simply showering, we can pay closer attention to how hot the water feels, how the shampoo smells, how it lathers on our hair, and how the various components of a mindful shower quote interact.
